What’s in a CSA delivery? Some people like to refer to our CSA boxes as “mystery boxes” because you never know exactly what you’re going to get. We don’t like that term, because if you subscribe to a Package #3 (for example) you do know what you’re going to get – 2 lbs of steak cuts, 4 lbs of roast & braise cuts, and 5 lbs of ground meat. The words “steak” and “roast & braise” essentially mean “expensive” and “moderately priced” so another way to think of Pack #3 is:
- 2 lbs of meat that on average costs $20-$30/lb, that you’ll probably want to save for one special occasion dinner each month.
- 4 lbs of meat that you’ll use in big Sunday evening stews that you’ll eat all the following week.
- 5 lbs of ground meat that you’ll use in Saturday morning scrambles and emergency Thursday even taco dinners.
The “mystery” element is that you don’t know what species or exact cut you’ll get – your expensive cuts might be beef filet mignon one month, and then goat loin chops the next month. The moderate cut might be lamb spare ribs one month and then pork shoulder the next. So we encourage people to dust off a good recipe book and dig in!
